ROB EVERETT RACV Club General Manager
Wattle Day marks the rst day of spring, and last month the Club
proudly embraced the green and gold for the Matildas' sensational
performance in the Womens World Cup. Bourke Street Green
hosted a viewing session of the semi-nal live and, although
the Matildas were knocked out aer a 3-1 semi-nal defeat to England, football
enthusiasts lled the Club eatrette to watch Spain claim the title.
No sooner was the Women’s World Cup over and it was back to AFL, with
preparations underway for the return of the Clubs Annual AFL Grand Final
Luncheon on Level 17 aer a three-year hiatus. With a ve-star panel of former
players and expert commentators, its a great way to bring friends and colleagues
together to share in the excitement. Lets hope its another great run for the
mighty Swans.
Tempting as it is to drop in a dad joke for Fathers Day, I’ll resist and just suggest you
celebrate the day with a Father’s Day lunch at Bistro or Banyalla. Notably, Banyalla
was the recipient of an award at this year's Victorian Accommodation Awards for
Excellence, which recognise the state's most outstanding accommodation providers.
RACV Healesville Country Club & Resort won Regional Hotel Restaurant of the Year
for Banyalla, while RACV City Club won Superior Accommodation of the Year. Two
RACV resorts (Cape Schanck and Torquay) also won awards (see page 9).
Another unmissable event is the inaugural Four Chef Showdown between the City
Club and Healesville Country Club & Resort. We know our talented chefs deliver
unique experiences of the highest quality every day, but how well will they perform
under pressure live on stage? Given the competitive nature of our head chefs, this
event promises to be one of the great Club nights. See page 6 for details.
Families are also spoilt for choice in September, with six dierent school holiday
activities on oer. Check out the What’s On page at racv.com.au/club-whats-on. You
can plan a spring break around an upcoming event or just come in for a meal and
movie – whatever takes your fancy. I hope to see you soon at the Club.

n the world of whisky, the conversation is shiing from mere sips
to holistic experiences. e marriage of avors, the exploration of
cultural inuences, and the integration of whisky into food marks an
intriguing evolution – one that will be highlighted and celebrated at
the Club this month.
Sous Chef Callum Nugent says he'll be experimenting with whisky's
bold and complex avours to produce unique food pairings for the
Nikka Whisky Masterclass on 3 October and Nikka Whisky Dinner
on 4 October. "Like cooking with wine, it's all about the tannins and
acidity, but whisky has a stronger avour and you have to play with
that; you have to be a bit more adventurous," he says.
Imagine a dish where the smokiness of a coee malt whisky marries
with the delicate avors of seafood, exemplifying the extent to which
whisky can elevate a meal.
e intimate masterclass oers an introduction to some of Nikka’s
most exclusive whiskies with complementary canapes, while
the event in the Members Dining Room takes it to the next level.
Members and guests will sample eight rare and limited Japanese
whiskies while gaining insight from Nikka Whisky Ambassador
Marcus Paramenter and Callum about the perfectly matched foods.
Nikka is a Japanese whisky company that dates back to 1934. e
company’s founder, Masataka Taketsuru, trained in Scotland and is
WILD ABOUT WHISKY?
Taste some of Nikkas most exclusive nips as part of a
whisky masterclass or ne dining experience
considered to be the father of Japanese whisky. Now owned by Asahi,
Nikka is the second largest whisky producer in Japan.
ese two Club events are a fabulous way to learn about Nikka's
accumulated knowhow, vast reserve of yeast cultures and the skillful
blending that makes their whiskies unqiue. It's also a way of elevating
the palate and expanding the appreciation of both whisky and food.

nifes are being sharpened, recipes are being rened, and the
best produce is being ordered for the Clubs inaugural Chef
Showdown.
City Club's Executive Chef Jason Camillo, Executive
Sous Chef Craig Dowling and Pastry Sous Chef
Josh Cochrane will take on Healesville’s Head
Chef Himanshu Sharda, competing to win
your hearts and minds by creating their
favourite dishes live on stage.
Members and their guests will get to
judge the dishes as part of a four-course
meal with matched wines.
It’s the rst of a series of events pitting the
City Club against the Country Club as a
fun way of showcasing the culinary skill and
talent at the two locations.
"It's game on," says Himanshu. "ey should be
worried. e fact that it's three City Club chefs against
one Healesville chef for this rst event, that’s a statement in
itself. I think they are underestimating us big time."
He comes to the competition with an award under his belt. Banyalla,
which he oversees, won Regional Hotel Restaurant of the Year at the
Victorian Accommodation Awards for Excellence last month. "Our
secret weapon is being simple and grounded," he says.
Although Himanshu will be outnumbered at the rst event, he’ll get to
set the agenda when the next event is held at Healesville next year.
Jason says working in another chefs kitchen is like an AFL team
playing an away game on an unfamiliar oval. “You have intimate
knowledge of your own kitchen, but when you step into somebody
else’s kitchen, it’s a dierent story,” he says. You don’t know
the hotspots in the ovens. You don’t know where
everything is, so it feels unfamiliar, and it takes a
while to warm up."
e event will be held on Level 17, similar to
the recent Italian Migrant Journey dining and
masterclasses, but the stakes will be higher,
with big-screen TVs capturing the chefs’
techniques, tips and (heaven forbid) failures.
“You can’t wing it up on up on stage because
the audience can see you putting the dish
together,” Jason says. “en everyone will get to
try that dish, so hopefully what we put up matches
what comes out of the kitchen.
e dishes for the competition will be kept secret until
the night, and guests will be able to judge the food on avour,
presentation and even the performance of the chefs.
“We want people to be entertained, and we want people to have insight
into what goes on behind the scenes,” Jason says. It will either be a case
of too many chefs in the kitchen or boil down to a
blockbuster night.
l Four Chef Showdown, Fri 22 Sep,
6.30pm-10.30pm, Level 17, City Club,
$120pp. Book via this link or the QR code.
CHEF SHOWDOWN

STORY
FINE WAY TO INDULGE
Silver service is back in the Members Dining Room,
to enchance your dining experience. Along with
polished silverware and elegant crockery, you'll have
attentive waitsta serving food at your table.
Executive Chef Jason Camillo says there will be a
dierent roast each day, accompanied by vegetables,
sauces and garnishes. "Members enjoy the sense of
exclusivity and specialness that comes with silver
service," he says. "Along with the curated food and
wine experience, it makes the Members Dining
Room a special place to enjoy lunch or dinner."
Crepes Suzette has joined the Members Dining
Room's crave-worthy desserts. e traditional
French dessert, which consists of crepes doused in
a caramilised sauce made of orange juice, Grand
Marnier and cognac, will be ambéed table-side.
It may be a blast from the past but Crepes Suzette
never goes out of fashion. "ere's a sense of drama
and occasion when you ambé the crepes - a bit like
uncorking champagne - while serving them hot
retains and enhances all the avours," Jason says.
As an added bonus, service with a smile is assured
with Members Dining Room Assistant Manager
Dayan Gunapala (right).

JOY OF
SPRING
Wendy Scully, centre, helps people unleash their style with the perfect headwear.
Wendy says its all about nding your own style and what suits you.
“It’s not necessary to buy a new outt. You might have something in
your wardrobe that’s classic and comfortable and that suits you.
Likewise, the hat you choose needs to suit your head shape, hair colour
and outt. “It’s usually best to have a contrast,” Wendy advises. “If
you have a dark hair, wear a light-coloured hat. If you wear a black
hairband, it can look like your head is misshapen from a distance.”
It also needs to be practical, especially if you’re attending a luncheon.
Wendy says a hat with a big brim can knock the person next to you,
while a fascinator that’s too large can block your view on one side.
A smaller fascinator, pillbox hat or something thats easy to wear at
a table will mean you can still eat and not have your view hindered,
Wendy says. “But it does depend on the person. Some people want to go
over the top and thats ne; we can create headwear to suit them, too.

RISE AND SHINE
T
he Body Re-form program at City Club Fitness Centre is
designed to help you achieve your body transformation
goals in a supportive and focused environment.
Led by experienced trainer Renee Henderson, this
program is centered around strength training
and functional workouts.
"I have people who are aiming to lose
weight, others who want to increase muscle
mass, and some who just love the training.
Whatever the reason, everyone gets the
support and education they need to make life-
long changes," she says.
Renee's committment to the program stems from
her own weight-loss journey aer the birth of her third child. She's
studying to be a nutritionist and is qualied to write personalised
nutrition plans, which focus on macro and micronutrient balance.
Body Re-form participants receive a detailed booklet outlining their
workouts and exercises, along with nutritional goals, ensuring they're
equipped with the tools to succeed.
"roughout the programme, I share recipe ideas and explain how
to increase proteins in a meal or when it's OK to snack on chocolate.
Nothing is o limits. If it works with your macronutrients, you can eat
it. It's about being aware of what you are consuming, how much
you're consuming, and if that ts within your allowance."
Beyond physical transformation, Body Re-form also
fosters a sense of community and support. Group
Zoom sessions allow for open conversations
about nutrition, tness, and overall wellness.
"I teach participants proper liing techniques,
how to spot for each other, and if there's a big
group they pair up and support each other,"
Renee says. "e group I have now are great at
motivating each other during the sessions."
e booklets are key to documenting everyone's progress. "Everyone
is very focused on going forward, so we write up what they did the
previous session, and they can measure their improvements and see
they are getting stronger."
Renee says there is a tness program to suit everyone. She also runs
Bootcamp on Mondays and Wednesdays, which provides high-
intensity training sessions (see story on page 11) in an outdoor
environment. If it's raining, she nds a dry area at the Club to ensure
everyone still gets a workout.

BREATH OF FRESH AIR
If you're an early riser and love outdoor workouts, then Bootcamp
might be the perfect choice for you. Club Member Tom Torpy is an
enthusiast and has been a regular participant since 2007.
"We meet at the Fitness Centre, then go to Flagsta Gardens, down
by the Yarra or to another park. It feels great to be outside," Tom
says. At its peak Bootcamp had a dozen regulars, but numbers have
dwindled and Tom is keen to share the benets of outdoor exercise
with others. His daughter is a recent recruit.
"Renee varies the exercises all the time, which is the beauty of
it," Tom says. "It might be hill sprints or stair runs; we use the
environment around us. Whereas if you go to the gym, you repeat
the same exercises and I get bored with that."
Bootcamp accommodates dierent tness levels, ensuring everyone
feels comfortable and challenged. As far as Tom is concerned, it's a
breath of fresh air and a cost-eective way of getting t, with support
and guidance from a personal trainer and fellow participants.

CLUB COLLABORATION GIVES STUDENTS A CHANCE TO SHINE
In a delightful collaboration between RACV Club and Worawa Aboriginal College, an event was held at Healesville Country
Club & Resort to provide students with hospitality skills, career insights, and a platform to showcase their talents. Fourteen
students were guided through the intricacies of table setting, along with the correct cutlery and glassware for each course. A
number of RACV sta also shared their career journeys and oered advice on what it takes to succeed.
Club Director of Sales Kylie Shorter says it was inspiring to see each student present a speech in front of their peers, while
being lmed. As well as bolstering their public speaking skills and self-condence, it was a precursor to their Debutante Ball
on 25 August. "is type of collaboration is highly valued by both parties, and the girls had a great day," she says.
Distinguished attendees included Worawa's Elder in Residence Lois Peeler and Executive Director and School Principal
Tanya Peeler. Kylie says one student from Worawa is undertaking work experience at One Spa every ursday this school
term, illustrating another way the Club is helping nurture young talent.

AWASH WITH CREATIVITY AND CONVERSATION
C
lub member Colin Ellis’s work revolves around enhancing
workplace cultures and engaging with clients worldwide, so
a traditional oce isn’t a necessity. He spends a
great deal of time working directly with clients in
their own environments, but he still needs a place
to concentrate and hold meetings, away from
the disruptions of household life.
“For me, the Shared Workspace is a bit
of an oasis,” he says. “I could work from
home, but then the kids come home from
school and it interrupts the ow of work. I
want to be able to concentrate for as much of
the day as I can.
He says he could choose from various options
like WeWork or other similar places, but he nds
these spaces somewhat manufactured and oen lled
with individuals working in solitude. In contrast, City Clubs Shared
Workspace has a sense of community, myriad spaces in which to work,
and just the right amount of ambient noise, which he nds energising.
“I walk in here and feel like being productive,” he says. “What I like
is the dierent services. If I need to make phone calls I can use the
private spaces. If I have clients, I can hire the boardroom and use
the presentation materials. If I want inspiration I can sit and
look out of the window. ere’s also food on site, and
everyone is really friendly as well.
Working across Australasia, the US and Europe,
with organisations such as Red Bull and Cisco,
he nds the Shared Workspace to be invaluable
– giving him the ability to work in dierent
locations with ease, while maintaining the same
level of comfort and amenities. is allows him
to remain focused on his work and connect with
diverse clientele without the need for a dedicated
oce space.
“e great thing about being part of the RACV Club is when I do go
interstate, there are reciprocal clubs and resorts that I can use. Ive just
come back from doing a full-day presentation with a client at RACV
Royal Pines Resort.

CATALYST FOR CREATIVITY
Jane Cahir, right, has seen the Shared Workspace at
City Club grow into a vibrant hub of collaboration and
inspiration since she took on the role of supervisor
16 months ago. Lighthearted conversations are part of her
day and over time she has come to know many regulars. "I
play Aussie rules and members will come in on a Monday
and say, 'How'd the footy go?' And that leads to so many
other conversations."
Around 900 RACV Club Members regularly access the
light-lled and exible co-working space, which provides a
productive and convivial setting, as well as a space to engage
with a diverse range of people.
Along with the increase in bookings come more food
options for those utilising the space, including jaes, pies,
and salads, with the menu changing every week.
“It’s a nice area for members and they get to the chance to network with other people and build relationships as well,” Jane says.
“Some people set themselves up in one spot for the day, while others have meetings on Level 2 and oat in and out of Level 1.

Whether you choose to cruise, cycle or trek, there are multiple ways to enjoy
Vietnams rich heritage, natural wonders and friendly people
V
ietnams history is a tapestry of resilience, struggle, and triumph.
Across the country you can see evidence of its former ancient
kingdoms, French colonial rule, and the challenges of the
Vietnam War. Each monument and attraction visited reveals more about
what makes the country – and its people – tick.
Knows as the Land of the Ascending Dragon because of its long, skinny
geography, Vietnam has a 1650km coastline and two climate zones. is
means theres always a good time to visit at least one region. For the most
idyllic weather across the whole country, visit in March and April.
ere are a ra of direct ights from Melbourne, including daily with
Vietnam Air, and you can y into Ho Chi Minh or Hanoi for a group
tour or holiday package that takes in all the highlights.
CONTEMPORARY HO CHI MINH CITY
Ho Chi Minh City (or Saigon) is the nancial and trend-setting centre
of the country. Its main attractions - besides the chaotic choreography
of some of the seven million-plus scooters on the roads – include the
Reunication Palace, Notre Dame Cathedral, War Remnants Museum,
and, some 60km away, the infamous Viet Cong Cu Chi Tunnels.
THE MELLOW MEKONG
For an entirely dierent pace of Vietnamese life, take a side trip to the
Mekong Delta or see it as part of a Scenic's Luxury Mekong cruise. e

waterways are the regions lifeblood, providing transport, trade, and
food for its 21 million residents.
Witness the locals haggling for fresh produce from boats at the bustling
oating markets, visit the Mekongs famed Buddhist landmarks, and
get lost in Tra Su Mangrove Forest. All the while sampling the delicious
exotic fruits and seafood.
FABULOUS PHÚ QUOC
To experience the best beach in Vietnam, y an hour to Phú Quốc. O
the coast of Cambodia, in the Gulf of ailand, this island paradise
oers white sandy beaches, crystal-clear waters, verdant forests,
gushing waterfalls, and diverse wildlife.
Only 10-15 years ago, Phú Quốc was an under-visited destination
most known for housing 40,000 North Vietnamese PoWs. Now, enjoy
beachside resorts, snorkel the turquoise waters, rejuvenate at a day spa,
and discover the islands rich cultural history on tour.
ENCHANTING HOI AN
Charming Hoi An, in Central Vietnam, is a stand-out destination. Its
Ancient Town is a UNESCO World Heritage Site, with architecture
representing its time as an inuential Southeast Asian trading port
from the 1400s to the 1800s.
A fusion of Vietnamese, Chinese, and Japanese inuence, allow enough
