nifes are being sharpened, recipes are being rened, and the
best produce is being ordered for the Club’s inaugural Chef
Showdown.

your hearts and minds by creating their
favourite dishes live on stage.
Members and their guests will get to
judge the dishes as part of a four-course
meal with matched wines.
It’s the rst of a series of events pitting the
City Club against the Country Club as a
fun way of showcasing the culinary skill and
talent at the two locations.
"It's game on," says Himanshu. "ey should be
worried. e fact that it's three City Club chefs against
one Healesville chef for this rst event, that’s a statement in
itself. I think they are underestimating us big time."
He comes to the competition with an award under his belt. Banyalla,
which he oversees, won Regional Hotel Restaurant of the Year at the
Victorian Accommodation Awards for Excellence last month. "Our
secret weapon is being simple and grounded," he says.
Although Himanshu will be outnumbered at the rst event, he’ll get to
set the agenda when the next event is held at Healesville next year.
Jason says working in another chef’s kitchen is like an AFL team
playing an away game on an unfamiliar oval. “You have intimate
knowledge of your own kitchen, but when you step into somebody
else’s kitchen, it’s a dierent story,” he says. You don’t know
the hotspots in the ovens. You don’t know where
everything is, so it feels unfamiliar, and it takes a
while to warm up."
e event will be held on Level 17, similar to
the recent Italian Migrant Journey dining and
masterclasses, but the stakes will be higher,
with big-screen TVs capturing the chefs’
techniques, tips and (heaven forbid) failures.
“You can’t wing it up on up on stage because
the audience can see you putting the dish
together,” Jason says. “en everyone will get to
try that dish, so hopefully what we put up matches
what comes out of the kitchen.”
e dishes for the competition will be kept secret until
the night, and guests will be able to judge the food on avour,
presentation and even the performance of the chefs.
“We want people to be entertained, and we want people to have insight
into what goes on behind the scenes,” Jason says. It will either be a case
of too many chefs in the kitchen or boil down to a
blockbuster night.
